Brown Soda Bread

cooking spray
2 12 cups whole wheat flour
12 cup all-purpose flour
12 cup steel cut oats
2 tablespoons brown sugar
1 tablespoon wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
12 teaspoon salt
2 cups low-fat buttermilk
1 large egg, lightly beaten


Preheat oven to 325. Coat 9 x 5 inch loaf pan with cooking spray. linte the pan with parchment paper, and coat with cooking spray. Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 6 ingredients (through salt). Combine buttermilk and egg. Add to flour mixture and stir until just combined. Spoon the mixture into prepared pan. Bake at 325 for 1 hour and 5 minutes or until a wooden pick inserted in centre comes out clean. Invert bread onto wire rack, cool completely. Remove parchment. Slice bread into 12 pieces.
