Blackberry And Apple Sponge Recipe
Ingredients:

1 kg apples, Granny Smith
2 c. blackberries, fresh
5 Tbsp. sugar (caster)
100 gm butter
1/2 c. sugar (caster)
3 x Large eggs
1 1/2 c. flour, self-raising
1 Tbsp. cornflour
2 c. vanilla custard
1 c. cream

Instruction:

Peel, core and slice the apples into a pie dish, add in the blackberries and sprinkle with sugar. To make sponge:Cream butter and sugar till light and fluffy. Add in Large eggs one at a time, adding a little flour with the second egg. Mix in the remaining flour and cornflour. Spread sponge mix over fruit. Bake in a moderate warm oven 190C/375F for 30 to 40 min. Sprinkle with a little caster sugar and serve warm with cream and custard.
