Chocolate-Orange Layer Cake

1-1/2 pkg. (250 g each) Philadelphia Brick Cream Cheese, softened
6 Tbsp. butter, softened
6 cups icing sugar
1 Tbsp. orange zest Safeway 1 lb For $0.79 thru 02/09
12 drops orange food colouring
2 baked chocolate cake layers (8 inch), cooled
3 oz. Baker's Semi-Sweet Chocolate
1/2 of 500-mL tub Cool Whip Whipped Topping (Do not thaw.)


Beat first 5 ingredients with mixer until blended. Cut each cake horizontally into 2 layers. Stack on plate, spreading 3/4 cup frosting between each layer. Frost top and side with remaining frosting. Microwave chocolate and Cool Whip in microwaveable bowl on HIGH 2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. Cool 15 min. ; spread over top of cake, allowing excess to drizzle down side. Keep refrigerated.
