8 kirby cucumbers, peeled
1 cup plain yogurt
2 lemons, zested and juiced
4 tablespoons fresh dill
salt & freshly ground black pepper
Using a spoon, remove the seeds and slice the cucumber into half moon pieces. In a small bowl, mix the yogurt, lemon and dill to make the dressing. Season to taste with salt and pepper and toss with cucumber "half moons".
