12 lb roll of pork sausage
1 medium onion, chopped (optional)
1 unbaked prepared 9 inch pie shell
12 cup shredded swiss cheese
1 cup half-and-half
12 teaspoon salt
14 teaspoon pepper
Preheat oven to 425F Cook and crumble sausage and onion until sausage is browned. Cover bottom of pie crust with mixture and top with cheese. In medium mixing bowl. Beat eggs and add half and half, salt and pepper. Pour over sausage mixture. Bake 15 minutes. Reduce oven to 350 F and continue cooking for 20 minutes or until set. Let stand 5 minutes then cut into wedges.
