Salmon & Rice, with Fruit in a Cloud

1/4 cup COOL WHIP FREE Whipped Topping
1 fresh peach
1/4 lb. fresh or frozen blueberries
1/2 cup instant brown rice, uncooked
3 oz. salmon fillet or steak
1 tsp. extra virgin olive oil
1/8 tsp. ground black pepper
1/4 lb. snow pea pods
1/2 Tbsp. trans fat free canola-based soft margarine


Make your dessert, Fruit in a Cloud, first to allow it to chill before serving. Spoon whipped topping into dessert dish. Using back of spoon, spread whipped topping onto bottom and up sides of dish. Refrigerate until ready to serve, along with peach (sliced, and spritzed with lemon or orange juice to prevent browning) and blueberries (1/4 pound = 3/4 cup) in a separate bowl. Cook rice as directed on package. Place measured amount of salmon on broiler pan sprayed with no stick cooking spray; rub one-half teaspoon of olive oil into salmon and sprinkle with black pepper (to taste). Broil 3-4 minutes per side, or until cooked through. Steam pea pods (1/4 pound = 3/4 cup), and top with margarine; serve with cooked salmon and rice. Finish preparing dessert after dinner by spooning peaches and blueberries into center of whipped topping.
