Big Mamas Apple Nut Cake

3 cups all-purpose flour
2 cups sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
4 eggs, lightly beaten
1 1/2 cup vegetable oil
2 cups peeled, grated apples
1 cup chopped nuts
2 teaspoons pure vanilla extract


Preheat the oven to 300F. Grease a 10 x 5-inch loaf pan or a 10-cup tube pan. In a medium bowl, combine the flour, sugar, cinnamon, and baking soda and mix well. Stir together the eggs and oil and then add to the dry ingredients. Stir in the apples, nuts, and vanilla extract. Pour the mixture into the prepared pan. Bake for 1 hour and 15 minutes before testing the cake for doneness. Remove it from the oven when the cake tester comes out clean. Let the cake cool slightly before removing it from the pan.
