Cappuccino Muffins

13 cup brown sugar
1 tablespoon unsweetened cocoa powder
14 teaspoon cinnamon
2 12 cups all-purpose flour
2 tablespoons folgers classic roast instant coffee powder
1 teaspoon baking powder
1 teaspoon baking soda
12 teaspoon cinnamon
14 teaspoon salt
1 cup buttermilk
34 cup pbrown sugar, packed
13 cup vegetable oil or 13 cup canola oil
1 egg
1 cup semi-sweet chocolate chips


Preheat oven to 375F Grease a 12-cup muffin pan or line with paper liners. TOPPING: Combine brown sugar, cocoa and cinnamon in a small bowl. Reserve. MUFFINS: Combine flour, instant coffee powder, baking powder, baking soda, cinnamon and salt in a large bowl. In a separate bowl, combine buttermilk, brown sugar, oil and egg. Stir in dry ingredients. Stir in chocolate chips. Spoon batter into prepared muffin pan. Sprinkle muffins with reserved topping. Bake in preheated oven for 20 minutes.
