2 chicken breasts, small dice
4 slices of good bacon, small dice
8 ounces mushrooms, chopped
1 Jiffy cornbread mix
4 ounces of fire roasted chilies
1 cup frozen corn kernels
Preheat Oven to 350. Grease a 9x13 baking pan. Cook chicken, bacon and mushrooms together. Place chicken, bacon and mushrooms in the bottom of casserole pan. Mix Jiffy Mix according to directions. Add chilis and corn to the jiffy mix. Pour on top the chicken mixture. Bake 45 - 60 minutes or until corn bread is completely baked. Serve with a drizzle of honey on top. Enjoy!
