Slow Cooker Rice Pudding Recipe

4 Large eggs, beaten
1 quart. lowfat milk, scalded
1 c. sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 c. minced dates or possibly raisins
3 to 3 1/2 c. rice, cooked


In slow cooker, combine all ingredients. Cover. Cook at medium setting for 2 hrs. Stir after 1 hour. Reduce temperature to keep hot for serving or possibly refrigeratein refrigerator and serve cool. Serve with light cream, if you like. Makes 10 to 12 servings.
