Waldorf-like Chicken Salad

3 boneless chicken breast, cooked, cooled and shredded
1 cup mayo
3 scallions (green onions), chopped
3 celery stalks, chopped
1 green apple, peeled and chopped fine
1 cup chopped walnuts
2 tbsp tarragon
1 tbsp lemon juice (keeps apples from turning brown)
1 salt and pepper, to taste


Seperately chop apple and douse with lemon juice. Mix all ingredients together. Enjoy in sandwiches; or on crackers or fillo shells as an appetizer.
