Hash Browns
Ingredients:

4 medium potatoes, peeled
3 slices bacon, diced
butter or oil (for frying)
1 onion, sliced
1 tablespoon chopped fresh oregano

Instruction:

Parboil potatoes (or microwave on HIGH for 5 minutes). Cut into medium thick slices. Fry bacon until fat is transparent. Add butter and fry onion and potato with bacon, turning until browned. Sprinkle with oregano. Serves 6. The Popular Potato.
