Red Pepper Couscous
Ingredients:

1 tablespoon olive oil
1 cup uncooked Israeli couscous
3/4 cup chopped red bell pepper
1/2 cup chopped red onion
1 1/2 cups unsalted chicken stock
1 tablespoon unsalted tomato paste

Instruction:

Heat olive oil in a saucepan over medium heat. Add couscous; saute 3 minutes. Add bell pepper and onion; saute 4 minutes. Add chicken stock and tomato paste; bring to a boil. Cover, reduce heat, and simmer 10 minutes.
