Israeli Potato Salad
Ingredients:

2 lbs red potatoes, unpeeled
1 12 cups carrots, cooked and diced
1 cup peas, cooked
14 cup chopped red onion
1 dill pickle, diced
3 tablespoons chopped parsley
34 cup mayonnaise
1 hard-boiled egg
1 kirby cucumber, peeled and diced
salt and pepper

Instruction:

Boil potatoes. Simmer 25 minutes. Peel and dice. Combine with remaining ingredients.
