Peanut Brittle

3 cups sugar
1 cup light corn syrup
12 cup water
1 teaspoon water
4 12 cups dry roasted salted peanuts
4 tablespoons unsalted butter
2 teaspoons pure vanilla extract
1 teaspoon baking soda


Mix baking soda, teaspoon water and vanilla. Set a side. Mix sugar, 1/2 cup water and corn syrup in a heavy pot. Stirring constantly. Cook over medium heat unitl it reaches 240* on candy thermometer. Add butter and nuts. Cook until mixture reaches 290* on candy thermometer. Immediatly turn off heat. Quickly stir in baking soda mixture until light and fluffy. Pour onto greased half sheet pan, spray with cooking spray. Roll with a marble rolling pin until about 1/4 inch thick. Cool completely: at least 1 hour. Break into small pieces and store in an air tight container. Makes about 3 lbs.
