Broccoli Cheese Soup

14 cup butter
12 cup finely diced onion
12 cup finely diced celery
12 cup grated carrot
14 cup flour
1 12 tablespoons cornstarch
1 quart chicken stock
1 quart milk
1 12 lbs cubed American cheese
2 tablespoons dried parsley flakes
1 pinch red cayenne pepper
10 ounces frozen broccoli (thawed)


Saute vegetables until tender. Add flour, stir until foamy. Add chicken stock and milk. Stir. Add cornstarch, cubed cheese, parsley and pepper. Heat through. Add thawed broccoli. Heat through and serve.
