" Ma's" Oatmeal Cake and Icing

12 cup boiling water
1 cup quick oats
12 cup margarine
1 cup brown sugar
1 13 cups flour
2 eggs
12 teaspoon salt
1 tablespoon cinnamon
12 teaspoon nutmeg
1 teaspoon baking soda
1 cup shredded coconut
12 teaspoon vanilla
6 tablespoons margarine
14 cup cream (can use milk)
12 cup brown sugar
14 cup nuts, chopped (optional)


In a small bowl combine quick oats, margarine, and boiling water. Cover and allow margarine to melt, and mixture to cool a bit. Mix remaining cake ingredients and mix well. Spread into 9x13 greased and lightly floured cake pan. Bake at 350F for approximately 35 minutes or until done. For icing: Mix icing ingredients until well blended. Spread over cooled cake and put under broiler until coconut browns (watch this closely, the coconut will brown fast).
