Vietnamese chicken wings

1 lb chicken wing pieces
1 1/2 cup cilantro
1 clove garlic
1 medium jalapeno
2 tbsp fish sauce
2 tbsp fresh lime juice
6 tbsp unsalted butter
1 cup flour
1 canola oil
1 kosher salt
1 black pepper


Heat canola oil, lightly flour chicken and fry in batches til golden brown. Puree cilantro,jalapeno,garlic,fish sauce and lime juice. Heat butter. Make sure not to burn the butter. Mix butter and puree together. Toss chicken wings in mixture. Pour onto platter and garnish with leftover puree and limes. ENJOY!
