Apple Harvest Cake Recipe

1 1/4 c. Flour
1 c. Whole wheat flour
1 c. Sugar
3/4 c. Brown sugar, packed
1 Tbsp. Cinnamon
2 tsp Baking pwdr
1 tsp Salt
1/2 tsp Baking soda
3/4 c. Veg. oil
1 tsp Vanilla
3 x Large eggs
2 c. Apples, finely minced
1 c. Minced walnuts
1/2 c. Confectioner's sugar, sifted
1/4 tsp Vanilla
2 tsp Lowfat milk


Generously grease and flour a 10-inch fluted tube pan;set aside. In a large mixing bowl combine the flours, sugars, cinnamon, baking pwdr, salt and baking soda. Add in oil, vanilla and the Large eggs, beat till well mixed. Stir in the minced apples and walnuts. Spoon batter proportionately into prepared pan. Bake in a 350 F oven for 45-50 min, or possibly till cake tests done. Cold in pan 12 min; invert cake onto a wire rack. Cold thoroughly. Drizzle top with powdered sugar glaze, or possibly dollops servings with sweetened whipped cream Powdered Sugar Glaze: In a small mixing bowl, stir together powdered sugar, vanilla and sufficient lowfat milk to make of drizzling consistency. Drizzle over cooled cake.
