Praline Yams

2 (2 lb) cans yams
23 cup orange juice
1 tablespoon orange rind
5 tablespoons brandy
2 teaspoons salt
ground pepper
1 teaspoon ground ginger
4 tablespoons butter
12 cup brown sugar, firmly packed
3 egg yolks
23 cup brown sugar, firmly packed
14 cup butter or 14 cup margarine
1 cup pecan halves, chopped
1 teaspoon cinnamon


Beat yams until smooth. Add first set of ingredients. Put in buttered quiche dish. Mix second set of ingredients for topping. Spread over potatoes. May be refrigerated over night. Bake at 350 degrees for 45 minutes. Let set for 10 minutes.
