Holiday Bean Casserole

1/2 cups Apple Cider Vinegar
1 cup Brown Sugar
1/2 teaspoons Garlic Powder
1 Tablespoon Chili Powder
1/2 teaspoons Dry Mustard
1 teaspoon Salt
1 Tablespoon Red Pepper Flakes (optional)
1 whole Large Onion, Diced
1 can (15 Oz. Can) Lima Beans
1 can (15 Oz. Can) Kidney Beans
1 can (15 Oz. Can) Butter Beans
1 can (28 Oz. Can) Baked Beans
8 slices Bacon, Cooked (optional)


Simmer vinegar, brown sugar, garlic powder, chili powder, dry mustard, salt, chili flakes (if using) and onion together over medium heat for about 20 minutes. While this mixture is simmering, drain and rinse lima, kidney and butter beans. I usually use whatever beans I have on hand, and have successfully used pinto, cannelini, great northern, etc. Put all drained beans into a crock pot. Add baked beans, vinegar mixture and crumbled bacon, if using. Cook on low for 3 hours. You can also bake this in the oven at 350 degrees F for one hour if you dont have a crock pot.
