Vanilla Strawberry Pancakes

13 cups Vanilla Greek Yogurt
2 whole Egg Whites
1/2 teaspoons Vanilla Extract
13 cups White Whole Wheat Pastry Flour
1/2 teaspoons Baking Soda
1/2 teaspoons Sugar
1 dash Salt
1/2 cups Strawberries, Diced


Mix together the Greek yogurt, egg whites and vanilla extract in a small bowl. Set aside. In a separate bowl combine flour, baking soda, sugar and salt. Combine the wet and dry ingredients and whisk till evenly mixed. Fold in strawberries. Spray a non-stick skillet with cooking spray and heat it over medium heat. Then place 1/4-cup of batter onto the skillet. I flattened out my batter with the spatula to make the pancake cook more evenly. Cook till bubbles start appearing through the top of the pancake. Then flip the pancake and cook the other side until browned to your liking. Youll cook for about 1-2 minutes on each side. Remove the completed pancakes from the skillet and set aside on a plate while you cook the remaining batter. Makes 7 pancakes. Serving size 2 pancakes.
