Eggplant Roll-Ups (Ww 5 Points)

1 eggplant, peeled, sliced 1/4 inch thick lengthwise
4 tablespoons shallots, chopped
4 garlic cloves
1 12 cups tomato and basil pasta sauce
1 tablespoon extra virgin olive oil
6 pieces Laughing Cow light swiss cheese, 6 wedges
10 leaves fresh basil, shredded
12 cup parmesan cheese, grated


Peel and Slice Eggplant. Broil eggplant on on baking sheet until golden on both sides (15 mins). Saute shallots & garlic until soft. Add Tomato & Basil Sauce. Transfer to baking dish. Place 1 wedge of cheese and a basil leaf on one end of eggplant slice. Roll up. Lay seam side down in sauce. Top with Parmesan. Bake 10 to 15 minutes.
