Aioli For Salade Nicoise Recipe

1/2 c. lowfat buttermilk
1/2 c. egg beaters(r) 99% egg substitute
2 Tbsp. water
4 tsp lemon juice
2 tsp dijon mustard
1/4 tsp salt
1/4 tsp grnd red pepper
6 x cloves garlic halved
2 Tbsp. extra virgin olive oil
1/2 c. fresh bread crumbs


Place first 8 ingredients (through garlic) in a food processor; process till smooth, scraping sides of processor bowl occasionally. With food processor on, slowly pour oil through chute; process till well blended. Add in bread crumbs; process till smooth. Cover and chill. Makes 1 1/2 c.. Yield: 1 1/2 c. NOTES : Buttermilk is tangy - so it's a great low-fat ingredient which adds flavor to sauces and soups and baked goods. Gives body to waffles and pancakes.
