Southern Style Kale

1/2 packages kale
1/2 small shallot
1/2 medium red pepper
1 tsp minced garlic
1 pinch salt & pepper
1 crushed red pepper
1/4 cup chicken broth


On medium heat, cook diced/sliced bacon til desired doneness, do *not* discard drippings. Add shallots and red pepper and saute til soft. Turn heat down a bit, add kale. After the drippings are soaked up, add a splash of chicken broth. (In total, I slowly added a full 1/4 cup.) Season w s&p and crushed red pepper to taste. Serve!
