Breakfast Casserole

12 Eggs
1/2 cup Milk
1 lb ground breakfast sausage or bacon
1 packages diced or shredded frozen potatoes
1/2 tsp salt
pinch pepper
1/2 chopped onion
1 tbsp oil
1 1/2 cup Shredded Mild Cheese


Saute onion and sausage/diced bacon in a pan with oil for 10 minutes on medium heat While onions are sauteing whisk salt, pepper, milk and eggs in a large bowl until well incorporated. Coat a 9x13 baking or casserole dish spray or coat with oil or cooking spray. Add potatoes to bottom of pan. Add 1/2 of cheese on top of potatoes, followed by meat and onion mixture. Next pour in eggs and top with remaining cheese. Bake uncovered for 30 minutes on 375F.
