Oatmeal Coconut Pecan Cookies

2 sticks Unsalted Butter, Softened
3/4 cups Brown Sugar, Packed
13 cups Granulated Sugar
2 whole Eggs
1 Tablespoon Vanilla Extract
1- 1/4 cup All-purpose Flour
1 teaspoon Baking Soda
1 teaspoon Ground Cinnamon
1/2 teaspoons Salt
2- 1/2 cups Uncooked Oats
1 cup Pecans, Finely Chopped
1 cup Sweetened Coconut Flakes
1 Tablespoon Unsalted Butter, Softened For Greasing The Pans


Preheat oven to 350 degrees F. Mix together butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined, but do not over-mix. In another bowl, combine flour, baking soda, cinnamon and salt. Mix flour mixture into butter mixture. Mix in oats, pecans and coconut. Grease baking sheet with 1 tablespoon butter. Roll dough into balls, approximately 1 1/2 inches in diameter. Place dough balls onto baking sheet leaving about 2 inches between them. Bake for approximately 12 minutes until cookies are light golden brown. Recipe yields 3 dozen cookies.
