Chicken And Wild Rice Soup Recipe

1/2 c. celery, minced
1/2 c. onion, minced
1/2 c. carrot, minced
1/4 c. bell pepper, minced
2 quarts. chicken broth
4 c. cooked chicken
1 quart. whole lowfat milk
1 teaspoon salt
1 box UNCLE BEN'S® long grain wild rice (don't use seasoning pack)
12 ounce. fresh mushrooms (sauteed in butter)
1/2 c. flour
1/2 c. butter


Add in minced vegetables to Dutch oven with two qts of chicken broth and contents of wild rice box. Simmer 30 to 40 min. While rice cooks, make a white sauce by melting butter in pan; whisk flour; slowly add in lowfat milk. Stir till thick (8 to 10 min). Add in white sauce, cooked chicken, and sauteed mushrooms to Dutch oven with rice. Add in salt and pepper and heat through.
