Baked Scalloped Potatoes & Apples

6 whole Large Yukon Gold Potatoes, Peeled
3 whole Apples, Peeled, Cored
1 cup Low Sodium Vegetable Stock
1/4 cups Light Cream
Salt And Black Pepper To Taste
1 cup Shredded White Aged Cheddar Cheese
Fresh Chopped Parsley, For Garnish


Preheat oven to 400 degrees F. Using a mandoline, sliced potatoes and apples eveny. In a 9 x 12 inch baking dish, add one layer of potatoes, followed by one layer of apples. Add vegetable stock, light cream, salt and black pepper. Top with grated cheese. Cover with aluminum foil and bake 35 minutes covered, then remove foil and bake an additional 5 minutes to crisp up the cheese. Add fresh parsley as a garnish. Serve and enjoy! We love this with baked pork tenderloin.
