Egg-Free Spritz Cookies

1 cup Butter, Softened
1 cup Margarine, Softened
1 cup Plus 2 Tablespoons Sugar
2 teaspoons Vanilla Extract
1 cup Cornstarch
1 pinch Salt
3- 1/2 cups Flour


Preheat oven to 400 F. Cream butter and margarine together in a large bowl. Add the sugar and vanilla and beat well to combine. Add the cornstarch and beat well. Add the salt and half the flour and mix to combine. Add the remaining flour and mix well. Spoon the dough into a cookie press. Press cookies onto un-greased, cool cookie sheets leaving an inch or so between them. Bake for 5-6 minutes or until lightly browned on the bottom. Remove from oven. Allow cookies to cool on the sheet for a couple minutes and then move them to a wire rack to cool completely. Makes 11-12 dozen cookies.
