Chicken Spinach Quiche Recipe

1 unbaked pie shell
1 c. cooked chicken
1 c. shredded Swiss cheese
1 (10 ounce.) pkg. frzn minced spinach, cooked & well liquid removed
1 sm. onion, finely minced
2 Large eggs, lightly beaten
3/4 c. mayonnaise
2 tbsp. grated Parmesan cheese
3/4 c. lowfat milk
1/2 teaspoon dry basil
Grinding of black pepper


Bake pie shell, 375 degrees, after piercing sides and bottom of crust with fork, for 10 min, remove and reduce temperature to 350 degrees. In large bowl, toss together chicken, cheese, spinach and onion. Spoon into baked shell. Beat Large eggs, mayo, lowfat milk, Parmesan cheese, basil and pepper. Pour over chicken mix. Bake at 350 degrees for 40 min or possibly till golden brown and set. Let stand 10 min before cutting. May be warmed up. Serves 6 to 8.
