Gayle's Lentil Soup

1/2 tablespoon cumin
1-2 tablespoons minced garlic
1 tablespoon tumeric
1 teaspoon minced ginger
1/2 cinammon stick
1 chopped onion
1/2 cup chopped red pepper
1/2 cup shredded carrots
1 1/2 cups chopped tomatoes
1 cup coconut milk
1 cup lentils, green or red
3 cups pork stock (you may use chicken but I made my own stock)


Saute onion, garlic, ginger, carrot, pepper, and all spices in 2 tablespoons of oil, stirring until fragrant, about five minutes. Add the tomatoes, lentils, stock, and coconut milk. Bring to a simmer and cook until lentils are done, about 45 minutes. When adding lentils and liquid, you may add protein if desired. I added to this batch the pork from the bones I used to make the stock. Done! Serve with naan bread, if desired.
