Blondie's Mom's Simple Gingerbread Cookies

1/2 cup (1 stick) butter, room temperature
1/2 cup sugar
1/2 cup molasses
1 egg
1 tsp baking soda
2 tsp ground ginger
2 1/2 cup flour

Preheat oven to 350F. In a bowl, stir butter and sugar together with an electric mixer or by using a fork. Add molasses and egg and stir again. In another bowl, mix flour, baking soda, and ground ginger. Pour dry ingredients into wet. Mix and stir until you have a nice brown dough. On a floured board, roll out dough with a rolling pin or press it out with your fingers. Cut dough into shapes with cookie cutters and lay them on an ungreased cookie sheet. Bake in the oven for 8 to 10 minutes, depending on how thick your cookies are and whether you want them chewy or crispy. After cookies are cool, you can decorate them with icing if you wish. *This recipe makes about 3 dozen cut out cookies. *
