Hummus Chicken

10 Baby Carrots Chopped
1/2 Medium Onion, Diced
1 cup Fresh Or Frozen Broccoli
1 Tablespoon Olive Oil
4 pieces Boneless, Skinless Chicken Tenderloins
1 cup Hummus
1 whole Lemon
1/2 teaspoons Paprika Or Sumac
Salt And Pepper


1. Preheat oven to 450 degrees F. 2. Chop carrots and onion. 3. Toss carrots, broccoli, and onion with olive oil in a large bowl. Season with salt and pepper. 4. Season chicken with a few dashes of salt and pepper. 5. Spray large 9x13 baking dish with cooking spray. 6. Place vegetables in baking dish in one even layer. 7. Lay the chicken on top of the vegetables. Spoon hummus on top of each chicken tenderloin and coat evenly. 8. Squeeze the juice of the lemon over the chicken and vegetables. 9. Sprinkle entire pan with paprika. 10. Bake for 25-30 minutes or until chicken is cooked and vegetables are tender. 11. Serve over rice if desired and enjoy! Adapted from Gimme Some Oven.
