Turkey Patties Dijon

1 14 lbs ground turkey
1 cup fresh breadcrumb
1 egg
14 cup finely chopped scallion
1 12 tablespoons Dijon mustard
12 teaspoon dried tarragon
2 tablespoons butter
12 cup dry white wine


In a large bowl, combine turkey, bread crumbs, egg, scallions, mustard and tarragon. Shape into 4 patties, 1/2 inch thick. In a large skillet, melt butter over medium low heat. Add patties and cook, turning once, until golden brown outside and white but still moist inside, about 10 minutes total. Remove to plate, leaving drippings in pan. Add wine to skillet, raise heat to high, and boil, stirring up browned bits, until slightly reduced, 1-2 minutes. Pour sauce over patties and serve.
