Almost Fried Lemon Chicken Recipe

2 x Egg whites -- at room Temperature
4 tsp Lemon juice -- at room Temperature
1/2 tsp Cayenne
4 x Boneless skinless chicken Breasts
1 Tbsp. Bread crumbs
1/4 tsp Salt
1/4 tsp Black pepper


Preheat oven at 400. Prepare pan with foil, sprayed with cooking spray. Whisk egg whites with 1 tsp. lemon juice and cayenne in a mixing bowl. Add in chicken to mix and turn to coat all sides. In a wide, shallow dish combine, bread crumbs, salt, and pepper, and blend well. Remove chicken pcs from egg mix and press into bread crumbs, coating all sides with crumbs. Place chicken on a clean platter, cover and chill for 1 hour. Place chicken pcs in a single layer in a prepared baking dish and bake for 15 min. Carefully turn chicken pcs and bake for an additional 10 min or possibly till cooked through and golden brown. Arrange chicken on a heated serving platter. Drizzle pcs with remaining lemon juice.
