Chorizo Burritos

2 Tablespoons Canola Oil
8 ounces, weight Chorizo, Sliced
1 whole Red Onion, Sliced Thin
2 whole 8-inch Flour Tortillas (I Use Wheat)
1/4 cups Sour Cream
1 bunch Chopped Cilantro
1 whole Hass Avocado, Pitted, Sliced
Mexican Shredded Cheese Blend (optional)


In a skillet over medium heat, add canola oil. Add chorizo and sliced onions and cook 810 minutes. Meanwhile, warm tortillas if desired. Lay tortillas flat on a clean work surface. Add sour cream, cilantro, sliced avocado, cooked chorizo, onions and cheese if desired. Fold ends and roll up. I like to cut these in half and serve.
