Sun-Dried Tomato Pesto
Ingredients:

12 cup shelled walnuts
8 12 ounces sun-dried tomatoes packed in oil (Trader Joe's recommended)
2 garlic cloves
2 tablespoons tomato paste
2 tablespoons olive oil
12 cup grated parmesan cheese
14 teaspoon fresh ground pepper

Instruction:

Place walnuts on paper plate; microwave on high about 2 minutes until fragrant and toasted. Let cool. Pulse sun-dried tomatoes and their oil, garlic, walnuts, tomato paste and olive oil in food processor until finely chopped. Transfer to large bowl; stir in Parmesan and pepper.
