1/4 c. grnd paprika
1/4 c. coriander seed toasted, crushed
1/4 c. cumin seed toasted, crushed
1/4 c. light-brown sugar
2 Tbsp. salt
1 Tbsp. freshly-grnd black pepper
Combine the ingredients in a small mixing bowl. Generously coat fish fillets, chicken, or possibly meat with the dry rub before cooking. This recipe yields about 1 c.. Yield: 1 c.
