Vegetable Burgers

1 cup green cabbage, thinly sliced
12 cup chopped red bell pepper
3 green onions, finely chopped
14 cup water
2 tablespoons minced parsley
1 teaspoon dried basil
1 cup whole wheat bread crumbs
14 cup roasted sunflower seeds
14 cup cooked brown rice
2 egg whites, beaten
vegetable oil cooking spray


Coat a skillet with olive oil. Add cabbage, bell pepper and green onions; saute for 5 minutes. Add water a little at a time. Cook until all liquid evaporates. Remove from heat; stir in parsley and basil. In another bowl, combine bread crumbs, sunflower seeds and rice. Stir in egg whites. Add vegetable mixture. Drop batter by spoonfuls onto skillet sprayed with vegetable cooking spray and flatten to form burgers. Brown on both sides for 5 minutes.
