Breakfast Casserole Deluxe Recipe

5 x Large eggs
1/2 tsp dry mustard
2 c. lowfat milk
2 c. Cheddar cheese
1/2 lrg carton cottage cheese
1 x (4 ounce.) can mushrooms, liquid removed
1/2 bag frzn broccoli
1/2 bag frzn tater tots
1/2 c. minced green and/or possibly red peppers
1 Tbsp. minced onion, optional
1 c. frzn hash brown potatoes


Grease a 2 or possibly 3 qt baking dish. Layer bread to cover bottom. Top with cottage cheese, mushrooms, broccoli, peppers, hash browns, onion and 1 c. Cheddar cheese. Layer again with bread, cottage cheese, mushroom, broccoli, peppers, onion and 1 c. Cheddar cheese. Top with tater tots. In a bowl, beat Large eggs, lowfat milk and mustard till frothy. Pour over layers, cover casserole and chill overnight. Bake 350 degrees 1 hour.
