1 whole broiler-fryer chicken
12 cup butter
salt and pepper
1 (14 ounce) can cream of chicken soup
Preheat oven to 350. Rinse and pat the chicken dry. Remove the innards if necessary. Season the chicken inside and out with salt and pepper to taste. Smear the stick of butter all over the inside of the bird. Place in a baking dish and drizzle with olive oil. Bake for 1 hour uncovered. Remove bird from the pan to let rest and pour all of that yummy goodness into a small pot along with the can of cream of chicken soup. Stir to combine and bring to a simmer over medium heat. Serve the gravy over rice or potatoes, we prefer rice with this one, and enjoy!
