Basmati Rice Salad Recipe

2 c. Basmati rice rinsed till water runs clear, and liquid removed well
3 Tbsp. Vegetable oil
1 lrg Onion thinly sliced
2 x Garlic cloves minced
1 x Cinnamon stick
1 x Bay leaf
2 whl cloves
1 x Cardamom pod
1/2 tsp Cumin
3 1/2 c. Boiling water
1/2 c. Golden brown raisins Salt to taste Freshly-grnd black pepper to taste
1/2 c. Cashews


Heat oil in a medium saucepan over medium-high heat, add in the onions and garlic and cook till soft. Add in the cinnamon, bay leaf, cloves, cardamom and cumin and cook for 1 minute. Add in the boiling water and raisins and season with salt and pepper to taste. Let the water come back to a boil, stir once, cover the pot, reduce the heat and let cook for 12 to 15 min. Remove from heat and let sit 10 min. Remove lid and fluff with a fork, mix in cashews and reseason with salt and pepper to taste. Serve at room temperature. This recipe yields 4 servings.
