Potato Salad (German)

8 medium Potatoes
1 medium onion, chopped
2 hard boiled eggs
1 1/2 tbsp minced garlic
3 tbsp dried celery flakes
1 tbsp dried dill
1 tbsp black pepper
1 tsp paprika
1 splash red wine vinegar
1 splash dill pickle juice
1/4 cup chopped dill pickles
6 tbsp spicy brown mustard
1/4 cup Miracle Whip or mayonnaise


Boil potatoes with skin on in large pot. Cover with enough water to just cover potatoes. Boil 30-40min or until tender. Fork should easily slide into potatoes. Using hot-pads, drain water from potatoes and rinse with cold water in colander. Peel potatoes when they are cool enough to handle and chop into mixing bowl Add remaining ingredients and gently mix well. Cover and refrigerate for several hours, overnight is best.
