JalapeAao Cheddar Sausage

2 lb chopped pork butt or shoulder
1 lb bacon, (after preparing this is a bit much; might want to reduce to 1/2 or 3/4 lbs.)
1/2 lb shredded cheddar cheese
3 each red fresno chili's
3 each jalapeAao chili's
1 each small onion
1/4 cup cilantro
1/4 cup chili powder
1/8 cup sugar
10 each cloves garlic


Prechill the pork before grinding; put it in the freezer. This will take about an hour. Have to cut it in cubes first, about 1 inch or so. Chop all else, minus the cheese, in your food processor; or chop it by hand. Mix all, minus the meat, with your cheese. Add some powdered smoke if so inclined. I like mesquite. Grind your meat. Now mix EVERYTHING together. Now I put it in the frig for a day, stirring twice, to let the flavors meld. Stuff them! They're great grilled!
