Tangy Horseradish Dressing

1 lemon
3 tablespoons creme fraiche or 3 tablespoons sour cream
3 tablespoons Greek yogurt, plain
1 tablespoon honey
2 tablespoons prepared horseradish
2 tablespoons Dijon mustard
salt & fresh ground pepper, to taste


Zest the lemon, then juice half of it. In a lidded container like a jar, combine juice and zest with remaining ingredients, then cover and shake to blend. You can of course adjust to make it spicier, creamier, or sweeter to your liking.
