Easy Vegetarian Chili

1 Tablespoon Olive Oil
1 cup Onions, Chopped
3/4 cups Carrots, Chopped
3 cloves Garlic, Minced
1 cup Green Bell Pepper, Chopped
2 Tablespoons Chili Powder
1- 1/2 cup Fresh Mushrooms, Chopped
1 can Diced Stewed Tomatoes, Undrained And Chopped (28 Oz)
1 can Black Beans, Undrained (19 Oz)
1 can Whole Kernel Corn, Undrained (11 Oz)
1 Tablespoon Cumin
1 Tablespoon Dried Oregano
1 Tablespoon Dried Basil


1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. 2. Stir in green pepper and chili powder. Cook until vegetables are tender, about 6 minutes. 3. Stir in mushrooms, tomatoes, beans, and corn. Season (according to taste) with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. 4. Cover, and simmer for 20 minutes, stirring occasionally Serve with cornbread and optional cheese.
