Quinoa And Black Beans
Ingredients:

1 teaspoon canola oil
1/2 each green bell peppers chopped
2 tablespoons red onion chopped
1/2 cup black beans rinsed
2 tablespoons chicken broth, low salt or water
1/2 cup quinoa hot cooked

Instruction:

Heat oil in a small saucepan over medium heat. bell pepper and onion and cook until almost tender. Add beans and broth (or water) to the pan. Cook until heated through. Stir in quinoa.
