Strawberry & Feta Salad with Mint Walnut Pesto

3 Tablespoons Crushed Walnuts
6 whole Baby Spinach Leaves, Stemmed
12 whole Fresh Spearmint Leaves
1/2 whole Lemon, Juiced
1 teaspoon Honey
1 teaspoon Olive Oil
1- 1/2 pound Fresh Strawberries, Stemmed And Quartered Lengthwise
1- 1/2 ounce, weight Crumbled Feta Cheese


In a small food processor, combine walnuts, spinach, mint, lemon, honey and olive oil. Mix until a smooth puree is formed. Add strawberries and feta cheese into a bowl, then add pesto and toss to coat. Cover and refrigerate for one hour prior to serving. Nutrition information per 3/4 cup: 137 calories, 7 g fat, 4 g protein, 13 g carbohydrates, 4 g fiber
