Curry Cauliflower & Beans Soup

1 large red onion, chopped
1 tablespoon olive oil
12 head cauliflower, in florets
32 ounces chicken stock
1 tablespoon curry powder
12 teaspoon salt
1 (15 1/2 ounce) can garbanzo beans
French-fried onions (in can)


A dd onion and oil to stockpot on medium. Cook, stirring occasionally 10-12 min until onion begins to brown. Add cauliflower and stock to pot, cover. Increase heat to medium-high. Bring to a boil. Reduce heat to simmer. Cook 20-25 min until veggies are soft. Add curry powder, salt, and beans. Remove pot from heat. Puree soup carefully with hand blender until smooth. Heat on low 4-5 minute Portion into bowls and top with fried onion pieces.
